Amsterdam has become something like a second home. We stay a month at a stretch, often enough that we’ve stopped counting. The Waldorf Astoria is the version of the city we’d move into permanently if we could — an unassuming entrance out front, a UNESCO-protected private garden out back.
Guts & Glory is our favorite restaurant in the city. It’s bold enough with new dining concepts that the name doubles as a review. De Kas takes freshness further: it’s built inside a former municipal nursery and grows its own ingredients on site, or on a farm ten kilometers away. What’s on the plate depends on what was harvested that day.
